Southern Rock Lobsters mainly come from South Australia. They have a rich, sweet flavour and you'll often find that the leg meat is a little sweeter than the tail meat. These specific lobsters have a low oiliness and a moist, firm flesh.
Southern Rock Lobsters go great with butter, cayenne, coconut, cream, dill, French tarragon, garlic, lemon, lime, mustard and white wine (to name a few).
