Black mussels are the most flavoursome off all the mussels. They have a rich, strong flavour, high oiliness and moist, juicy, medium-textured flesh. All of the flesh inside the shell is edible. A female mussel tends to have a brighter orange meat as opposed to a male mussel which is paler in colour.
